“ Fantastic ramen spot in Seattle. Stopped by for dinner on a Saturday evening around 7:30 PM and it took as an hour to get our tables. While in line there are the customized menus they hand out for you to pick your order and food comes out really fast. We ordered the Negi gona ramen with rekkarise. Its amazing how they let you customize noodles thickness/firmness, thickness/richness of broth and karadare (umami spicy sauce). If required you can add additional ramen toppings as well. We enjoyed the sapporo as it paired really well with our ramen. The miso ramen with tofu was also delicious. This place is good for vegetarians as well. Is it worth the wait - absolutely yes! The place is small so wait times on weekends can be alot but its worth it. I will stop by again to satisfy my ramen cravings. Highly recommend. ”

“ LOVE the ramen here!! Love the options to customize...thinness and cook of the noodles; the boldness of the broth, and the different toppings you can choose. It's a little confusing at first, coming in you're in line and ordering on a slip of paper with pencils. But once you sit down, you quickly get served and the food comes out fast. The broth is super flavorful, it's simple but packs a punch and isn't too salty. I love the option of getting extra noodles for a few extra bucks if you have soup left over! ”

“ Note: This is my favorite ramen place in Seattle, but the service could be better, so that's why I'm giving them four stars instead of five. I know they're super busy because of how good the food is, so it's a really popular place. I came here on a Saturday afternoon, and there surprisingly was barely any wait time to eat at the counter. I love how customizable the ramen is because you can choose between thick and thin noodles, add however many toppings you want, and also make general adjustments to your liking (e.g., spice level, noodle firmness, umami flavor). We got the gyoza to share, and it was honestly delightfully pan fried and so tasty that I wish there were more pieces. I ordered the negi-goma ramen, and I loved the flavor of the broth. The chashu was thinly sliced, which I personally liked folding in half to eat. The eggs were very nicely soft boiled, and there was a generous amount of noodles in my bowl. The main reason why I'm giving four stars instead of five is because of the service. It's pretty fast-paced since the restaurant is so busy, which is understandable. I wanted a cup of water but didn't have one brought to me. Regardless, I'm still a big fan of Ramen Danbo and am looking forward to coming again. ”

“ Back in 2023, my friend and I wanted to go to Ramen Danbo, but it was 1.5-2 hour wait. I was too hungry to wait that long. However, I FINALLY got to try it about a week ago. The line was still long two years later! We waited maybe an hour, or so. I didn't keep track of the time since it was sooo cold outside. There aren't any reservations. It's first come, first serve. The restaurant isn't that big, so I wouldn't have big groups gather here. We were a group of four and even that felt like overkill. Once you get inside the restaurant, there are menus and pencils by the door for you to fill out what you want. My boyfriend and I shared a bowl of ramen since I wasn't too hungry. We got the classic chashu with a soft-boiled egg, nori, and a half order of kaedama. Even though it was a long wait, the food came out pretty fast! This is probably my favorite ramen restaurant in the PNW. The broth was warm and not too creamy. I liked the texture of the noodles. The soft-boiled egg was boiled perfectly! I would definitely come again to have my own personal bowl. ”

“ There's always a long wait here, no matter the time or day. And rightfully so, it's delicious. We waited 40 minutes for 5 people on Monday night around 8pm. It's easier if you have less people because you can sit at the bar and skip waiting for a table. While you wait, you fill out a sheet to customize what you want in your ramen. When we sat down, a waitress came to collect our sheets and answer any questions we had about the menu. She got us water and submitted our orders. We got our food within 10 minutes of sitting down and it was steaming hot and wonderfully delicious. Someone at our table got extra noodles half way thru the meal and they came out quickly. Their kitchen is fast! They were able to split our bill among the 5 of us and we were on our way in 30 minutes. Will be back! ”

“ Ramen Danbo in Capitol Hill absolutely lives up to the hype! From the moment you walk in, you can smell that rich, savory broth -- and let me tell you, it tastes even better than it smells. The broth is incredibly flavorful and perfectly balanced, rich with umami and just the right level of heat if you opt for spicy. I went with the classic Tonkotsu Ramen, and it was phenomenal. The noodles had great texture, the chashu pork was melt-in-your-mouth tender, and the soft-boiled egg was cooked to perfection. Bonus points for that delicious dollop of spicy miso on top! Every bite had so much depth -- definitely one of the best bowls of ramen I've ever had. And don't even get me started on the gyoza -- hands down the BEST I've ever had. Crispy on the outside, juicy on the inside, and full of flavor. It's worth visiting just for that alone. Yes, the place fills up fast, and there's usually a line, but it moves pretty quickly and the food is 100% worth the wait. The service is friendly and efficient, even when the restaurant is packed. If you're a ramen fan (or just someone who appreciates great food), you have to check this place out. I'll definitely be back -- probably sooner than I should! ”

“ It's for sure above average ramen but everything else is subpar all things considered. The wait can be 10 minutes during off times to hour+ during busy times. Negi-goma: Skip Way too heavy and too oily. Just an imbalance of flavors I've tried the other ramens and those are actually great so it was unfortunate the above was such a miss. Food: 8/10 Service: 6/10 Atmosphere: 5/10 Value: 5/10 ”

“ I've been cooking at home for almost a month. It's my first time eating Japanese ramen! They are famous for their vegetarian ramen. They use tofu instead of barbecued pork, but I just add 5 slices of barbecued pork. There are so many people that you have to stand in the rain to queue. There is a special queue line. Go in and get paper. There are two stacks. Remember to check whether it is regular or vegan paper. I took the vegan paper and was confused for a long time because I didn't find the option of adding soft-boiled egg and barbecued pork. The classic pork bone soup is delicious. My friend said the limited curry soup base is also good. ”
